About Chilli Cheese Paratha

Chilli Cheese Paratha is an unleavened whole wheat flatbread that is stuffed with grated cheese, chillies along with herbs & spices.

These parathas make a wholesome breakfast along with ketchup or pickle.

The recipe that I am sharing today includes processed cheese but you can easily tweak it with mozzarella cheese or cheddar.

These parathas are easy to make and donโ€™t take much of a time to prepare.

Cheese paratha in general is one of the most popular fusion dishes in India that is served for breakfast or as an evening snack.

These parathas are popular amongst kids and served along with tomato ketchup.

Made with whole wheat flour and flavourful cheese stuffing, this paratha is very easy to make and tastes delicious.

After aloo paratha, this is our familyโ€™s favourite recipe that we often include in our breakfast.

These are best served hot and pairs best with a cup of tea or coffee.

I like to use whole wheat flour for making these parathas but you can also make it using all-purpose flour (maida) or a combination of whole wheat and maida to make it more crispy.

These cheesy and yummy paratha can also be had as an evening snack especially for kids when they return home after school or play.

Cheese โ€“ To make this chilli cheese paratha I have used processed cheese. You may also use mozzarella, or cheddar instead. We will need to grate the cheese for the stuffing.

Whole Wheat Flour โ€“We will require whole wheat flour for making the covering of this paratha. If you like to have a crispy paratha then use half wheat flour and half all-purpose flour (maida).

Ginger & Green Chillies โ€“ For this chilli cheese paratha we will need 2-3 green chillies along with half an inch of ginger. Make a paste using morat-pestel. This chilli-ginger paste adds a nice punch of flavour to this paratha. While making for children, adjust green chillies accordingly or skip it completely.

Spices & Herbs โ€“ We will be using mixed Italian herbs like oregano, thyme and rosemary. To add a little heat, I like to add some chilli flakes which give a nice taste to this paratha.

Seasoning โ€“ We will use salt only in making the wheat dough. Do not add salt to cheese stuffing.

Fats โ€“ I have used ghee here but you can use ghee oil or butter.

Water โ€“ We will need water to make the wheat dough.

Ingredients

For The Dough

  • 2 cups Whole Wheat Flour
  • 2-3 cups Water (depending upon the quality of flour)
  • Salt to taste

For The Stuffing

  • 1 cup Processed Cheese or 6 Cubes
  • 1 tsp Ginger-Green Chilli Paste
  • 2 tablespoons Mixed Italian Herbs (Thyme, Oregano, Rosemarry)
  • 1 teaspoon Red Chilli Flakes

Other

  • 4 tbsp Ghee or Butter, for roasting the paratha

Instructions

Making The Dough

  • In a mixing bowl, add 2 cups wheat flour and salt.
  • Add water little by little and knead a soft dough. Do not addtoo much water in one go.
  • Cover the dough and keep aside for 20 minutes.

For The Stuffing

  • In a mixing bowl, grate the cheese and add ginger-greenchilli paste.
  • Add Italian herbs and chilli flakes.
  • Mix the herbs with the cheese.

Assembling Cheese Paratha

  • After 20 minutes of resting the dough, knead it again for a minute to soften it out.
  • Take a golf ball size portion of the dough
  • Dust it with dry wheat flour.
  • Roll it into a disc approximately 5-6 inches.
  • Place the cheese stuffing in the center and bring the edges together.
  • Dust the stuffed ball with dry wheat flour and roll the paratha. Apply very light pressure while rolling.
  • Roll the edges thinner than in the centre.
  • Heat a griddle (tawa) and place the paratha over it.
  • Cook the paratha for 1 minute & flip.
  • Apply ghee or butter. Roast the paratha from both sides till golden brown dots appear.
  • Keep pressing paratha occasionally which help them get crispier.
  • Delicious chilli cheese paratha is ready. Make the remaining parathas the same way.
  • Serve these stuffed chilli cheese paratha ketchup, green chilli sauce or coriander mint chutney.
