Prawns / Shrimps โ€“ For this recipe, I have used 200 grams of frozen prawns (shrimps).

Flours โ€“ We will need besan (gram flour) and rice flour (chawal ka atta) for the batter. Besan helps bind the paste and rice flour gives a magnificent crispness to the prawns.

Spices & Herbs โ€“ We will need red chilli powder, turmeric powder, cumin powder and garam masala powder. We will also require a teaspoon of ginger-garlic paste.

Yogurt โ€“ We will add 2 teaspoons of yogurt which helps the batter stay moist and adds a nice flavour. You can skip adding yogurt and add 1 whole egg instead.

Seasoning โ€“ We will add half a teaspoon of lime juice and salt to taste.

Oil โ€“ To deep fry the prawns.

Variations

Instead of using yogurt, you can add 1 whole egg to the marinated prawns.

Serving Suggestions

This is a starter recipe, served with green coriander chutney or schezwan chutney.

Ingredients

  • 200 grams Prawns (Shrimps)
  • 2 tablespoons Besan (Gram Flour)
  • 3 tablespoons Rice Flour
  • 2 teaspoons Curd (Yogurt)
  • 1 teaspoon Ginger-Garlic Paste
  • 1 teaspoon Kashmiri Red Chilli Powder
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon Garam Masala Powder
  • 1/2 teaspoon Cumin Seeds Powder
  • 1 teaspoon Lemon Juice
  • 1/4th cup Water, to bind the flours with prawns
  • Salt to taste
  • Oil, to deep-fry

Instructions

  • In a mixing bowl, add prawns, red chilli powder, turmeric powder, garam masala powder, cumin powder & salt.
  • Add ginger-garli paste, lemon juice and mix the spices with prawns.
  • Set aside prawns to marinate for 10 minutes.
  • Once marinated, add curd (yogurt), besan (gram flour) & rice flour. Add 1/4th cup water and mix well.
  • The batter of besan & rice flour should nicely coat the prawns so do not add too much water.
  • Heat oil in a kadhai to deep-fry the prawns.
  • Fry a few prawns at a time so as to not overcrowd the kadhai.
  • Fry on a medium flame for 3 minutes or till the prawns turn golden brown in colour.
  • Transfer the fried prawns on an absorbent paper.
  • Serve immediately with slices of onions & sprinkle some lemon juice on top.
  • You can also sprinkle some chaat masala on the top while serving.
