Being said that, summer brings a dash of a smile in the form absolutely delicious hydrating fruits that are abundantly available through out this season.
Fruits such as watermelon, jamun, jackfruit, tadgola (Borassus flabellifer) and the king of fruit โ Mangoesโ makes life quite easy to beat this heat!
I love summers only for two reasons! First, itโs the season of Mangoes!!! yay!! that means divine indulgence in Aamras (pulp of ripe mango). Then comes the Kairi (Raw Mangoes), oh!! that delicious tangy fruit!
Homemade kairi cha loncha (raw mango pickle), ambe dal, kairi bhaat (mango rice) are some of the most famous Maharashtrian recipes that are made almost in every Maharashtrian household during summer.
The most popular beverage made out of this amazing tangy fruit is a traditional Kairi Che Panhe / traditional Aam Panna.
Panha is the most popular drink from Maharashtra. It is a sweet, tangy and super refreshing drink that is consumed during summer. It is healthy and nutritious. This is a super quick and easy-to-make drink.
Made with fresh raw mangoes that are abundantly available in summer along with sweet jaggery (gul) or sugar and completed with a dash of cardamom, this panha makes a perfect thirst quencher.

During the summer season, a jar full of panha stocked in the refrigerator is mandatory at my home. Living in a tropical climate like Mumbai, it is highly necessary to keep one well hydrated.
The process of making this kairiche panhe is very simple.
Unripe raw mangoes are pressure-cooked. The skin is discarded and the pulp is mixed with jaggery or sugar and blended in the grinder.
This kairiche panhe can be stored in a refrigerator for about 2 weeks. You may also make a concentrate of this panha and while serving add water as per needed. We normally make small batches of this panha hence donโt opt for the concentrated version.
To make aam panna (kairi che panhe) always choose hard unripe mangoes. Choosing a mushy or ripe kairi would make this panha sweet and would not yield the actual taste of this drink.
Instead of jaggery or sugar, you may also add palm sugar to make this panha.
Apart from kairi panha other refreshing drinks that are normally consumed during summer are kokam juice, watermelon juice, lemon sharbat, lassi, Mango Mastani to name a few.
The traditional kairiche panhe that we make include jaggery instead of sugar. Aam Panna made with jaggery yields a nice bright, deep yellow colour.
Many times we grind a few mint leaves along with the kairi pulp which makes this panha more refreshing.
You can strain the mixture if you like, but at my place we normally donโt. Love those little bites of pulp ( if any ).
Kairiche panhe / aam panna is relished by all age groups, from elders to kids everyone loves this panna.
In the Hindu month of โChaitraโ on a religious occasion to celebrate the onset of the spring season, this panna is servedย along with a popular raw mango dish called โambe dalโ.

Ingredients
Raw Mangoes (Kairi) โ To make kairi cha panha we will need pulp of raw mangoes (kairi). We will need to cook the kairi and then scoop out the pulp.
Jaggery (Gul) โ For sweetness, we will use jaggery. Incase you do not have jaggery, use sugar instead.
Cardamon & Saffron- Cardamon gives a nice subtle taste to this panha. Adding saffron is optional but it imparts nice flavour and gives beautiful colour to the aam panna
Others โ We will use half a teaspoon of salt here and some ice cubes. You can also add some mint leaves for more refreshing flavours.

Kairiche Panhe | Aam Panna Recipe | Tangy & Sweet Raw Mango Drink
Ingredientsย ย
- 4 Kairi (Raw Mangoes)
- 3 cups Jaggery OR Sugar, adjust accordingly to the tanginess of the raw mangoes.
- 1 teaspoon Cardamon Powder
- 1/2 teaspoon Saffron Strands
- 1/2 teaspoon Salt
- 2 cups Water
- Ice Cubes, to garnish
Instructionsย
- Pressure cookย Kairi (Raw Mangoes) until 5 whistles.
- Once cooled, remove the skin & scoop out the pulp, discard the seed.
- In a blender add theย Kairi pulp (Raw Mangoes pulp), jaggery (gul), cardamon powder, salt and soaked safforn strands.
- Add 2 cups water.
- Blend to a smooth paste.
- Kairiche Panhe is ready.
- Transfer into the serving glass. Add some ice cubes and garnish with saffron.
- Serve Chilled
