In Mumbai, during the evening time, you will come across many food carts selling bhurji pav where the pav (Indian bread) is toasted with butter and served along with this spicy flavourful anda bhurji.
Bhurji pav is a heavenly combination and is loved by all from elders to kids.
This anda bhurji is quite similar to the Parsi dish Akuri. The main difference lies in the texture of these dishes.
Akuri is semi-dry and a little bit on the runny side whereas bhurji is dry but at the same time moist.

Eggs โ This recipe serves one person hence I have used 2 large eggs.
Vegetables โ We will require finely chopped onions and tomatoes which makes the base for this dish.
Spices & Herbs โ We will need roughly crushed ginger, green chillies, and some basic spices such as red chilli powder, turmeric powder, pav bhaji masala. We will need finely chopped coriander leaves (cilantro) to garnish.
Oil & Butter โ I have used 1:1 proportion of oil and butter.

How to make anda bhurji (egg Bhurji)
Note:
While cooking eggs, make sure the flame is medium.
I have used pav bhaji masala here. In case you do not have pav bhaji masala, you may add garam masala or chicken masala. I sometimes even add kitchen king masala.
I personally, break the eggs directly into the base, but you can break the eggs in a bowl add salt and gently whisk them before adding it to the onion tomato masala.
For the vegetarian version, you may substitute eggs with paneer. Just scramble the paneer by hand before adding it to the masala.

Ingredientsย ย
- 2 Eggs
- 1 Onion, finely chopped
- 1.5 Tomatoes, finely chopped
- 2 Green Chillies, finely chopped
- 1 teaspoon Ginger, roughly crushed
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Red Chilli Powder
- 1 teaspoon Pav Bhaji Masala
- 1 teaspoon Coriander Powder
- Salt to taste
- 2 teaspoons Coriander leaves (Cilantro)
- 1 teaspoon Oil
- 1 teaspoon Butter
Instructionsย
- Heat oil & butter in a pan or Kadai. Once hot, add green chillies and finely chopped onions and saute onions for 2-3 minutes.
- Add roughly crushed ginger and saute onions till they are translucent.
- Add chopped tomatoes and cook for another 5 minutes till tomatoes soften.
- Now add spices, turmeric powder, red chilli powder, pav bhaji masala and coriander powder. Mix well.
- Break the eggs into this onion-tomato mixture.
- Add salt and finely chopped coriander leaves.
- Once you add the eggs, keep on stirring the eggs continuously until its perfectly cooked.
- Anda Bhurji is ready.
- Serve it hot with pav (Indian bread), tava paratha or chapati.
