Heat oil & butter in a pan or Kadai. Once hot, add green chillies and finely chopped onions and saute onions for 2-3 minutes.
Add roughly crushed ginger and saute onions till they are translucent.
Add chopped tomatoes and cook for another 5 minutes till tomatoes soften.
Now add spices, turmeric powder, red chilli powder, pav bhaji masala and coriander powder. Mix well.
Break the eggs into this onion-tomato mixture.
Add salt and finely chopped coriander leaves.
Once you add the eggs, keep on stirring the eggs continuously until its perfectly cooked.
Anda Bhurji is ready.
Serve it hot with pav (Indian bread), tava paratha or chapati.
