Ingredients
  

  • 2 cups Tur Dal / Arhar Dal / Split Pigeon Peas
  • 1 Tomato, finely chopped
  • 5 Garlic Cloves, roughly crushed
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 3 Green Chillies, slit in between
  • 5-6 Curry leaves
  • 1/4th teaspoon Hing (Asafoetida)
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Jaggery (Gul)
  • Salt to taste
  • 2 teaspoons Coriander Leaves
  • 2 tablespoons Oil

Method
 

  1. Wash turdal 4-5 times till water runs relatively clean. Add 3 cups of water to the dal and pressure cook dal for 4-5 whistles.
  2. Once cooked, whisk the dal to a smooth consistency.
  3. In a kadhai, heat oil. Add mustard seeds and let them splutter. Add cumin seeds, add roughly crushed garlic and saute on low flame till it turns golden brown.
  4. Once garlic is golden brown, add hing, green chilles and curry leaves. mix well.
  5. Add finely chopped tomatoes. Cook tomatoes till they softens. Add turmeric powder and mix.
  6. Once tomatoes are cooked. Add the cooked dal and mix.
  7. Add jaggery and salt to taste. You can skip jaggery if you do not like it.
  8. Add water and adjust the consistency of the varan as per your preference.
  9. Let the dal come to a boil. Boil the dal for 3-4 minutes.
  10. Lastly, add finely chopped coriander leaves.
  11. Delicious and nutritious Phodnicha Varan is ready. Transfer to a serving bowl.
  12. Serve with soft steamed rice.
