Egg tawa masala or as we call in the desi term โ€œanda tawa masalaโ€ is a quick, simple Indian protein-rich dish made with eggs, spices, onions and tomatoes.

This is one of our go-to breakfast recipes that we often like to serve with toasted bread.

Apart from having it with bread, this anda tawa masala can also be had with paratha, and roti and can also be relished as a side dish with dal rice or sambar rice.

Egg tawa masala is popular across Indian households and also served on streets of India with butter-loaded pav (Indian bread).

Egg fry recipes are prepared all over India with lots of variations and every home has its unique way of making this dish.

Sometimes, boiled eggs are used, sometimes whisked eggs. Whatever the version it may be, you are going to love this dish.

The best thing about this egg fry is that this can be served at any time of the day. You can have it for breakfast, lunch, dinner and also can be carried in lunch boxes.

The dish comes together in under 20-30 minutes.

This easy healthy protein-rich dish is a simple combination of eggs cooked in flavourful onion-toamto masala that is spiced with Indian herbs.

This is a nourishing and filling dish bursting with flavours.

This rustic way of cooking this dish looks very appetizing.

I have added just onions and tomatoes here, but you can add extra veggies too like bell peppers, broccoli, and spinach to enhance the nutritional value of this dish.

You can also use canned tomatoes here instead of fresh.

Eggs โ€“ To make this egg fry, I have used 4 eggs. Instead of adding whole egg at a time, you can also whisk the egg and then spread it over the masala.

Vegetables โ€“ We will need 3 onions finely chopped and 2 tomatoes. You can also add bell peppers (capsicum) if you like.

Spices & Herbs โ€“ Basic spices such as red chilli powder, turmeric powder, coriander powder, garam masala and black pepper powder is used along with salt for seasoning.

Also, we will need, a teaspoon of ginger-garlic paste and green chillies.

Oil โ€“ I have used oil here, but feel free to use butter. This fry tastes amazing when done using butter.

Ingredients

  • 4 Eggs
  • 3 Onions, finely chopped
  • 2 Tomatoes, finely chopped
  • 1 teaspoon Ginger-Garlic Paste
  • 1-2 Green Chillies, finely chopped
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Garam Masala Powder
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chilli Powder
  • 1 teaspoon Black Pepper Powder
  • Salt to taste
  • 1 tablespoon Coriander Leaves, to garnish
  • 2-3 tablespoons Oil or Butter

Instructions

  • Heat 2 tablespoons of oil, add finely chopped onions.
  • Saute onions for 5 minutes.
  • Add finely chopped green chillies & ginger-garlic paste.
  • Saute till the raw flavour from ginger-garlic fades away.
  • Add finely chopped tomatoes and cook this mixture till tomatoes & onions soften.
  • Once tomatoes & onions are cooked. Add coriander powder, garam masala powder, turmeric powder, red chilli powder, black pepper powder and salt.
  • Mix spices with the onion-tomato mixture.
  • Add 1/4th cup of water to prevent spices from burning.
  • Cook till oil separates from the masala.
  • Add eggs one by one. You can break the eggs directly into the mixture.
  • Sprinkle very little salt and black pepper powder over the eggs.
  • Add coriander leaves. Cover and cook the eggs for 3 minutes from one side.
  • Using a spatula, divide the eggs and flip that portion of eggs.
  • Cook for 1-2 minutes on medium flame.
  • Easy egg tawa fry is ready.
  • Garnish with finely chopped coriander.
  • Serve hot with bread, paratha or as a side dish with meals.
