About Bhadang

What is Bhadang?

Bhadang is a popular, traditional Maharashtrian snack also known as Kurmura Chivda. It is widely known as Murmura Chivda in northern parts of India.

Bhadang is made with puffed rice, also called Kurmura (Murmura) tossed with lip-smacking spices, peanuts and herbs.

This is a staple snack in every Maharashtrian household and is gaining popularity nationwide.

Itโ€™s got everything, the spice, the crunch, a mild hint of sweetness that is absolutely irresistible!

Bhadang represents Maharashtraโ€™s culinary heritage.

Each region in Maharashtra adds its unique twist to this bhadang reflecting the diverse food culture of the state.

At home, we love to serve it as a tea-time snack which makes a perfect combo.

This bhadang is loved by children too.

ingredients

Puffed Rice โ€“ (Murmura / Kurmura) โ€“ I have used 150 grams of Puffed Rice (Murmura) for this recipe.

Herbs & Spices โ€“ We will require basic pantry staples like cumin powder, garam masala powder and red chilli powder.

For Tempering โ€“ For tempering, we will need mustard seeds, hing, turmeric powder, curry leaves, raw peanuts and coconut slices.

Seasoning โ€“ We will season this bhadang with salt and half a teaspoon of sugar to balance the flavour.

Oil โ€“ We will need just one tablespoon of oil.

Is Bhadang (Murmura Chivda) good for weight loss?

Yes! but only when it is homemade. Bhadang is a light snack made with puffed rice which is very low in calories. However, make sure that you use less oil at the time of tempering to make it a guilt-free snack option. Homemade bhadang is way better than store-bought bhadang.

Is Bhadang (Murmura Chivda) gluten-free?

Yes, bhadang which is made of puffed rice is naturally gluten-free, however, make sure that you use spices and herbs that are also gluten-free.

Is Bhadang (Murmura Chivda) Kid-Friendly?

Yes, just make sure to make a milder version which is not too spicy for kids. Kids love the crunch and subtle flavour of this bhadang.

Variations

Kolhapuri Bhadang โ€“ Known for its high spice levels, you may add Kolhapuri kanda lasun masala to umph up the spice levels. This kanda lasun masala not only gives that extra spice kick but also adds to the flavour of this bhadang.

Adding Garlic โ€“ If you love garlic flavour in your chivda, then feel free to add roughly crushed garlic in the tempering to take this bhadang to the next level.

Adding Nuts โ€“ Apart from adding peanuts, you may also add cashews and almonds for that extra crunch and nutrition.

Adding Kasuri Methi โ€“ To enhance the flavour of this bhadang, you may also add half a teaspoon of kasuri methi (dry fenugreek leaves) which gives this bhadang a unique taste and aroma.

Serving Suggestions

With Chai (Tea) โ€“ Bhadang pairs best with a piping hot cup of masala chai. Itโ€™s like a match made in heaven!

Bhadang Bhel โ€“ To give it a more mouthfeel and add some more nutrition, add chopped onion, tomatoes, fresh coriander leaves and a dash of chaat masala for a quick Bhadang Bhel.

Storage Options

Bhadang is a dry snack. Hence it stays good for a month.

Store it in an airtight container at room temperature.

Make sure you keep the bhadang in a cool, dry place away from sunlight as it might get soggy due to humidity.

Ingredients
ย ย 

  • 150 grams Puffed rice (Kurmura/Murmura)
  • 1/2 cup Raw Peanuts
  • 1/4th cup Dry Coconut Slices
  • 1 teaspoon Mustard Seeds
  • 1/2 teaspoon Turmeric Powder
  • 1/4th teaspoon Hing (Asafoetida)
  • 1-2 tablespoons Red Chilli Powder (depends on how spicy to like)
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Garam Masala
  • 6-7 Curry Leaves
  • 1 teaspoon Sugar
  • Salt to taste
  • 1-2 tablespoons Oil

Instructions
ย 

  • Heat oil in a heavy bottom pan. Add mustard seeds, when mustard seeds crackle add hing, turmeric powder, curry leaves and peanuts.
  • Roast on low flame till peanuts changes colour to light brown.
  • Add dry coconut slices and roast them for 2 mintues.
  • Once peanuts & coconut are roasted, add a cup ofย murmura followed by red chilli powder and salt. Mix and add the remainingย murmura.
  • Mix well. Now add cumin powder and garam masala powder. Roast on low flame.
  • Roastย murmura continuously till they turnย crisp. This process might take approximately 15 mins on low to medium flame.
  • Once theย murmura is crispy and covered with all the spices add 1 teaspoon of sugar and mix well for a minute.
  • Bhadang โ€“ Murmura Chivdaย is ready.
  • Onceย Bhadangย cools down, store it in an airtight container.
  • Serveย Bhadangย as aย snackย with a hot cup of tea or for a mid-day meal.

Notes

Always make sure that you roast every item on low flame.
If you want to add more flavour to this bhadang, you may add roughly crushed garlic in the tempering before you put curry leaves.
You may add roasted chana dal (dalia / pandharpuri dal) for taste and crunch. I personally donโ€™t add chana dal in Bhadang but always add in Poha Chivda, it gives a nice taste and texture to the chivda.
Sometimes instead of red chilli powder, fresh green chillies are used. But you need to be very careful while adding the chillies. If the chillies does not dry up completely and retains any water then it might make the murmura soggy.
