Paneer (Indian Cottage Cheese) โ To make this Amritsari Paneer Bhurji, I have used 250 grams of store-bought Paneer (cottage Cheese). You may grate the panner or crumble it.
Besan (Gram Flour) โ For this recipe, we will dry roast besan till it releases its aroma. Make sure to roast on low flame stirring continuously.
Vegetables โ We will need onions and tomatoes for the base masala.
Curd (Yogurt) โ For that creamy texture, we will add 3 tablespoons of curd.
Spices & Herbs โ To enhance the flavour of this Amritsari Paneer Bhurji we will use basic spices like red chilli powder, turmeric powder, cumin & coriander powder. I have also used Kitchen King Masala Powder which gives a nice flavour to this bhurji. Instead of Kitchen King Masala, you may use Garam Masala too.
Apart from powdered spices, we will also need roughly crushed ginger-garlic paste and green chillies.
To enhance the flavour of this and make it a dhaba-style bhurji, we will add kasuri methi (dried fenugreek leaves).
All the spices and kasuri methi Are available at any Indian grocery store as well as on Amazon. I have shared the product links in the recipe card.
Seasoning โ We will add salt to taste.
Oil โ I have used oil for this recipe but you can also make this in butter.

Amritsari Paneer Bhurji | Dhaba Style Amritsari Paneer Bhurji
Ingredientsย ย
- 250 grams Paneer (Indian Cottage Cheese)
- 2 tablespoons Besan (Gram Flour)
- 3 tablespoons Curd (Yogurt)
- 1 Onion, finely chopped
- 1 Tomato, finely chopped
- 2 Green Chillies, finely chopped
- 1 teaspoon Ginger-Garlic, roughly crushed
- 1 teaspoon Coriander Powder
- 1/2 teaspoon Cumin Powder
- 1 teaspoon Red Chilli Powder
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Kitchen King Masala Powder OR Garam Masala Powder
- 1 teaspoon Kasuri Methi (Dried Fenugreek Leaves)
- Salt to taste
- 2 tablespoons Oil OR Butter
Instructionsย
Roasting Besan (Gram Flour)
- Dry roast besan (gram flour), roast till it releases its aroma. Once done, keep aside to cool.
Making Curd Mixture
- Whisk curd, add coriander powder, cumin powder, chilli powder and turmeric powder. Mix well. Keep aside.
Making Amritsari Paneer Bhurji
- Heat oil in a pan. Add finely chopped onions and cook till translucent.
- Add green chillies & crushed ginger-garlic paste. Saute till raw smell of ginger-garlic fades.
- Add roasted besan (gram flour) and mix well. Saute for 2 minutes.
- Add finely chopped tomatoes. Add a splash of water, cover and cook till tomatoes soften.
- Once tomatoes are cooked, add the spiced curd mixture and give it a mix.
- Cook this mixture till oil seperates from the masala.
- Meanwhile, grate or crumble paneer.
- Once the oil separates from the besan-curd mixture, add 1/4th cup of water.
- Adding water ensures the paneer is coated evenly with the masala.
- Add the paneer and mix gently.
- Add kitchen king masala powder and salt to taste. If you do not get kitchen king masala, use garam masala powder instead. Mix everything.
- Add 1/4th cup of water again. Amritsari Paneer Bhurji is slightly gravy-based, hence add water as per the consistency you prefere.
- Cover and cook for 2 minutes.
- Add kasuri methi, cover and simmer for further 2-3 mintues.
- Delicious & creamy Amritisari Paneer Bhurji is ready.
- Garnish with fresh coriander leaves.
- Serve hot with laccha paratha or any flatbread of your choice.
