Maharashtrian Flower Batata Bhaji | aloo Gobi Sabji (No onion No Garlic)

Flower batata bhaji also called as Aloo Gobi Ki Sabji is a delicious everyday kind of sabji recipe often prepared in Indian households.
This is an easy-to-make, vegan, no onion no garlic (satvik), beginner-friendly recipe that pairs best with roti or as a side dish with dal rice.

Ingredients
  

  • 1 cup Cauliflower Florets
  • 2 Potatoes, peeled & cubed
  • 1 teaspoon Mustard Seeds
  • 1/4th teaspoon Hing (asafoetida)
  • 1/2 teaspoon Turmeric Powder
  • 2 teaspoons Goda Masala (OR 1 tbsp Garam Masala)
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Jaggery (Gul)
  • Salt to taste
  • 2 teaspoons Coriander Leaves (Cilantro), to garnish
  • Water to cook the vegetable
  • 2 tablespoons Oil

Instructions
 

  • Pluck or chop cauliflower florets.
  • Heat oil in a kadhai, add mustard seeds and let them crackle. Add asafoetida (hing), turmeric powder and cubed potatoes. Mix well.
  • Add half a cup of water to the potatoes, cover and cook for 3-4 minutes on medium flame.
  • After 3-4 minutes, add the cauliflower florets and mix well.
  • Add 1/2 cup of water for the vegetables to cook.
  • Add red chilli powder, goda masala (or garam masala powder), jaggery (or 1 tsp sugar) and salt.
  • (In case you do not have goda masala, add garam masala powder).
  • Mix everything well, cover the pan and let the cauliflower and potatoes cook for another 7-8 minutes. Keep on checking in between stirring occasionally.
  • Add little water if you feel flower-batata is dry.
  • Make sure not to overcook the cauliflower florets till they are mushy. You may cook them till they are soft but try not to overcook them.
  • Finally, add finely chopped coriander leaves (cilantro) to garnish.
  • Flower Batata Bhaji - Cauliflower Potato Sabji Maharashtrian Style is ready to serve hot with a flatbread of your choice or with rice.
