Method
- In a mixing bowl, break 3 eggs.
- Add finely chopped onions, green chillies, ginger-garlic paste
- Add finely chopped tomatoes, coriander leaves.
- Add spices, red chilli powder, turmeric powder, chicken masala powder, black pepper powder and salt. Whisk well.
- Heat pan, add oil and spread all over the pan.
- Take a ladle full of omelette mixture and spread it all over the pan.
- Cook the omelette on a medium flame for about 2-3 minutes.
- Flip and cook it from the other side as well.
- Spicy Indian Masala Omelette is ready.
- Serve hot with toasted bread and ketchup.

Notes
I have added onion-tomatoes to this omelette, you can add vegetables of your choice or you can totally skip the vegetables and make it by adding only spices and herbs.
Instead of chicken masala, you can add garam masala to this egg batter.
For a vegetarian version, add besan (gram flour) instead of eggs.
