Method
- Heat oil in a thick bottom pan, add mustard seeds and let them crackle.
- Add hing & turmeric powder
- Add roughly crushed garlic and saute till the raw smell of garlic fades away & they turn golden in colour.
- Saute garlic on low flame, we do not want to burn the garlic.
- Add roughly chopped green chillies.
- Add finely chopped onions and saute till they are translucent.
- Add chopped cabbage (kobi). Add sliced potatoes.
- Mix cabbage and potatoes well with onions.
- Add spices, garam masala powder, coriander-cumin powder, red chilli powder, salt and jaggery (or sugar).
- Mix well. Add 1/4th cup of water. Cover and cook till potatoes and cabbage is soft and done.
- Kobi chi bhaji - Cabbage potato sabzi is ready. Serve hot with phulka or roti.

Notes
You can also add green peas if you like. It gives a nice texture and taste to this cabbage sabzi.
