Sweet corn bhel is a delicious and refreshing Indian street food snack made with boiled sweet corn along with vegetables & sweet-spicy chutneys.
This is an easy-to-make, beginner-friendly, vegan snack recipe best for an evening snack.

Ingredients
  

  • 1 cup Sweet Corn Kernels
  • 1 Onion, finely chopped
  • 1/2 Tomato, deseeded & finely chopped
  • 1 Green Chilli, finely chopped
  • 1 teaspoon Raw Mango (Kairi), finely chopped
  • 1/2 teaspoon Red Chilli Powder
  • 1 teaspoon Chaat Masala Powder
  • 1-2 tablespoons Masala Boondi
  • 1 teaspoon Spicy Coriander Chutney
  • 1 tablespoon Dates & Tamarind Chutney
  • 2-3 tablespoons Sev (Besan Vermicelli)
  • 1 tablespoon Coriander Leaves, roughly chopped
  • Salt to taste

Method
 

Cooking Sweet Corn Kernels
  1. Heat water & bring it to a boil.
  2. Add sweet corn kernels. Add salt to taste.
  3. Cook these corns till they become soft but not mushy. They need to have a slight bite.
  4. Once cooked, drain the water and keep them aside to cool down.
Making Sweet Corn Bhel
  1. In the mixing bowl, add the boiled sweet corn kernels.
  2. Add finely chopped onions, tomatoes, green chillies, raw mango (kairi).
  3. Add powdered spices, red chilli powder, chaat masala and salt to taste.
  4. Now add masala boondi, spicy coriander chutney, dates & tamarind chutney, coriander leaves and squeeze half a lemon and mix everything well.
  5. Transfer the bhel to the serving bowl.
  6. Garnish the sweet corn bhel with fine sev (besan vermicelli) & coriander leaves.
  7. Chatpata Sweet Corn Bhel is ready. Serve immediately.
