Heat oil in a pan, add finely chopped onions & green chillies. Saute till onions are translucent.
Add finely chopped carrots, capsicum (bell peppers), green peas.
Saute the vegetables for 2 minutes on high flame. Lower the flame, cover & cook for 2-3 minutes.
Add half a cup of water and salt to taste. Cook the vegetables till they are 80% percent cooked.
Add spices, turmeric powder, red chilli powder, coriander powder, Maggi taste maker & little salt.
Mix spices well with the vegetables and saute for 2 minutes.
Add 420 ml (approx 2 cups) of water for 2 packs of Maggi noodles
Cover and bring water to a boil
Add Maggi noodles and cook for 2-3 minutes or till water is completely absorbed.
Vegetable Maggi Masala is ready. Transfer in a serving bowl and serve hot.
